Too Many Peppers

We have had an absolutely endless Indian Summer here on the central coast. And when I say endless, I mean endless! We are looking at the end of October and we still have temperatures reaching 80 degrees.

All that heat and sunshine has kept the garden growing like gang busters. I have been ignoring my peppers since I picked right after we got home from vacation because we had so many then, that  I was totally swamped. Here's a little flashback in case you forgot:


There were a couple hundred peppers in that one picking. And now, here we are again:



Oh boy! Peppers galore.
Does anybody have any ideas? I have already roasted, pickled and poppered to my limit.
Or better yet, does anybody want some? Please??!!

  2. Yummy! What a blessing to have so many peppers!! The bell peppers freeze nicely...dice some for 'sketti, chilli, slice some to go with grilled onions and peppers for sandwiches to have on hand during the holidays. You can also mince some peppers and onions and add to ground beef or turkey...make patties or meatballs and freeze for later. Or you could make and can some delicious salsas, chilli sauces, or even make pepper jelly.
    If we were neighbors....you wouldn't be having this problem of too many peppers... :)

  3. Man I wish I lived right there! Our little stash from the summer isalmost gone! We just pop them in freezers bags and pull them out as we need them! We use A LOT of peppers! Honeyman is a jalapeno freak! Lol and I could have beautiful culoiured peppers in every meal! One word...jealous! :o)

  4. You can dehydrate some of the peppers. Add them to stews, pasta, soups for a boost of flavor. You can also make up dry soup mixes as gifts. Good luck with the harvest.
